11.9 Slow Cooking
Use this function to prepare lean, tender
pieces of meat and fish. This function is
not applicable to such recipes as pot
roast or fatty roast pork. You can use the
Food Sensor to guarantee that the meat
has the correct core temperature. You
can use the function Slow Cooking with
or without the Food Sensor. Use the
Food Sensor for meat which must not be
roasted thoroughly.
The oven continues to operate with the
function Keep Warm until it deactivates.
In the first 10 minutes you can set an
oven temperature between 80 °C and
150 °C. The default is 90 °C. After the
temperature is set, the oven continues to
cook at 80 °C. Do not use this function to
prepare poultry.
Always cook without a lid
when you use this function.
1. Sear the meat in a pan under a very
high heat.
2. Put the meat in a roasting dish or
directly on the wire shelf.
3. Put the tray below the shelf to catch
the fat.
4. Put the shelf in the oven.
5. Put the core temperature sensor into
the meat.
6. Select the function: Slow Cooking
and set the correct end core
temperature.
7. An acoustic signal sounds when the
appliance is at the set temperature.
Then, the oven automatically sets a
lower temperature to continue
cooking.
